Nat wanted to design a restaurant concept with enough depth in it that he could take the groundwork he laid and start up his own restaurant after high school. His project required him to gather 12 recipes and make edits to them. He then he had to run 4 days where he would come in and cook the recipes he had gathered. He crafted feedback cards and prepared his dishes for peer review, asking for comments regarding flavour, texture, and presentation. Between cooking days, he collaborated with two students on separate parts of his project. He collaborated with Emma-Leigh Guay, a student working on video game design this semester. Together they created a logo for his restaurant. His collaboration with Grace MacPherson, a student working on a collection of doors that are themed around certain styles in fashion, involved Grace sketching many uniform concepts.
Nat also wanted to run his restaurant as a pop-up in the school’s cafeteria. Starting this year, the cafeteria program is being run by students, so he reached out to Mr. Winters with a proposal. His proposal was accepted by Mr. Winters and they had a meeting where they agreed that Nat would run the cafeteria with his menu for three consecutive days.
